Cod Green Thai Curry

Cooking time: 10 minutes

Serves: 2

Ingredients:

250 g pack (2 portions) Cooke Seafood Atlantic Cod

Green Thai Curry Sauce Meal Base or Paste

125 g microwave rice

2 Bok-choy washed, cut in half

Lime wedges, to serve

Fresh chilli, thinly sliced, to serve

Handful Thai basil leaves, to serve

3-4 sprigs coriander leaves, to serve

Instructions:

1. Pat cod fillets completely dry with paper towel, season with salt.

2. Preheat a nonstick frying pan with olive oil over medium heat fry fish for 2-4 minutes per side until golden brown and flaky.

3. Bring a medium pot of water to the boil. Add the bok choy halves for 30 seconds – 2 minutes to blanch. For best results, place bok choy in an ice bath straight away to stop the cooking process.

4. 1 minute before fish is cooked, add green curry sauce from sachet and warm through.

5. Heat rice per pack-instructions.

6. Transfer the cod to serving plates, add rice, bock-choy, green curry sauce and garnish with lime wedges, chill and herbs.
