Cod with Sticky Asian Sauce & Greens

Cooking time: 10 minutes

Serves: 2

Ingredients:

250 g pack (2 portions) Cooke Seafood Atlantic Cod

1 tbsp light oil

1 clove garlic, minced

2cm piece ginger, peeled and minced

2 spring onions

1 ½ tbsp sweet chilli sauce

1 tbsp soy sauce

2 tsp sesame seeds, toasted

250 g cooked brown rice & quinoa

Steamed choy sum, to serve

Instructions:

1. Heat half of the oil in a frying pan over medium heat. Cook cod portions for 4 minutes, turn and cook for a further 3 minutes. Cooking time may vary depending on the thickness of the fish. Set aside covered in foil to keep warm.

2. Wipe pan if necessary and add remaining oil. Cook garlic, ginger and spring onions for 1-2 minutes or until just tender. Pour in the sweet chilli sauce and soy sauce. Heat through.

 

3. Meanwhile, heat the pre-cooked rice mixture to pack directions.

4. Serve cod with the rice & quinoa mix, steamed choy sum and drizzle with the sticky sauce.
