Maple Glazed Sockeye Salmon

Cooking time: 20 minutes

Serves: 2

Ingredients:

2 Sockeye Salmon fillets, skin on
3 tbsp maple syrup
2 tbsp soy sauce
1 tbsp fresh ginger, peeled & grated
Sea salt
Freshly ground black pepper

Instructions:

  1. Preheat the oven to 200°C degrees.
  2. In a small bowl whisk together the maple syrup, soy sauce, ginger, salt & pepper.
  3. Line a baking dish with foil, ensuring the edges are covered so the glaze doesn’t spill. Brush the foil with olive oil and place the Sockeye Salmon skin side down.
  4. Pour the glaze mixture evenly over the fillets.
  5. Bake the Sockeye Salmon uncovered for 15 minutes, then remove from the oven and coat the fillets with glaze from the dish.
  6. Cook for an additional 5 minutes or until the Sockeye Salmon flakes easily with a fork.

Serve with your choice of greens and fresh lemon.

For maximum flavour, marinate fillets in the glaze for several hours before baking.
