Smoked Salmon on Crackers with Pickled Onions

1 small red onion, thinly sliced into rings

1 tbsp apple cider vinegar

25 crackers

½ cup spreadable cream cheese

250 g COOKE Natural Smoked Salmon

Capers and dill, to serve



  1. Combine onion and vinegar in a small bowl and set aside for 20 minutes, tossing occasionally.


  1. When ready for serving, spread each cracker with some cream cheese, top with smoked salmon slices, pickled onion, capers and dill. Enjoy immediately.



Tip: keep any remaining onions in a sealed container in the fridge for later use.

Note: A 250g salmon would be enough for 25 crackers, based on 50g per serving this will serve 5.
